A Roasting chicken, way more than 1 meal!

You’ve just had a beautiful chicken dinner and this is what’s left.

What to do with the rest of the chicken!


I love cooking whole chickens.  They provide so much!  This is a around a 7 lb chicken and I can make about 4 different meals and stock from one bird!

First pull all the meat off the chicken.


Once you have all the chicken off put in bowl and set aside.  Don’t throw those scraps away put them back in the pot and add 4 cups of water to make delicious homemade chicken stock.


While the stock is cooking you can use the meat you pulled off to make these chicken meals.

Chicken and biscuit filling and chicken noodle casserole.  I also like to leave some extra meat for chicken salad or a sandwich.  Yum!

Chicken filling is so easy!

~Add 2 cups of chicken to a medium sized pot

~Sprinkle chicken with a tablespoon of flour

~Turn to medium heat and add 2 cups of stock and stir

~ Add a sprinkle of salt and pepper.

This filling can be used in a variety of dishes chicken pot pie, chicken and biscuits, chicken lasagna, or if you need an easy soup.

Chicken noodle casserole.

~ Cook 2 cups of noodles (what ever you prefer)

~ Cook 1 box of stove top stuffing

~ Add Chicken filling (Recipe above) and noodles to a medium sized casserole dish

~Top with stuffing

Almost done!


Strain and ladle the remaining stock in what ever containers you like.  I used old lunch meat containers. They stack great in the freezer.

Now you can throw the rest away feeling great because you just made some meals and have some great stock! Plus you did not waste perfectly good food. Enjoy!
