You can make chicken so many different ways with all kinds of different ingredients. Since I’ve had kids I always try to sneak healthy ingredients in my recipes. The secret in this chicken is putting some chia flax seed mix into my breading. It actually gives the breading a nice flavor and great crunch!
Ingredients
3 chicken breasts
1/2 cup oil (I use Extra Virgin Olive Oil)
2 eggs
1 cup bread crumbs
1/4 teaspoon paprika
1/2 teaspoon herb mix
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons chia flax seed mix
First I start by pounding the chicken breasts. I like to make my clean up nice and easy so I use 2 pieces of plastic wrap and put the chicken breasts between it. Pound the chicken using what ever you like. I have a little meat mallet, but the bottom of a mason jar works great too!
For the breading add bread crumbs, seasonings, and chia flax seed mix to a shallow dish. Pie plates work great for this! Gives you plenty of room to get all that breading on the chicken.
Crack 2 eggs in to a shallow bowl and whisk together. Now you are ready to set up your assembly line
Poor oil into and large cast iron skillet and turn to medium high heat.
Let the oil heat up for a couple of minutes. Dip your chicken into the egg, in the bread crumb mixture, and in to that hot skillet. I can fit 2 chicken breasts in to my skillet at a time.
Cook for 2-3 minutes on each side or until golden brown.
Let cool and Enjoy! This is one of my kids favorites and they don’t even know that I sprinkled in a little fiber, omega 3’s into their diet.
