Walnut Almond Quinoa Granola

I love making Granola!  I make it all different kids of ways with healthy ingredients.  This granola is loaded with great things!  My favorite addition to this one is some quinoa.  Gives the granola a great crunch, texture, and great added nutrients.




1\4 cup almonds

1\4 cup walnuts

2 tablespoons chia flax seed mix

2 tablespoon dry quinoa

2 cups oatmeal

1/2 cup peanut butter

1/3 cup honey

1\4 cup coconut oil

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon salt

Place nuts in a plastic bag to crunch up.  I used the bottom of my canning jar to smash them up or a rolling pin would work well.


Add all dry ingredients in to a large bowl.  Put peanut butter, coconut oil, vanilla extract, and honey into a microwave safe bowl (I used my large measuring cup).  Put wet mixture into microwave for 1 minute.  Stir wet mixture in to dry ingredients and stir until well blended.


Poor mixture on to wax paper.  Press mixture together and let cool in the fridge for a couple of hours.


This is great to eat anytime!  Easy for a snack on the go or when I need a little dessert.  I break off a piece and put some cool whip on top yum!
