If you love stuffed peppers this is a great recipe for you! A hearty healthy soup that will fill you up.
1 pound ground sausage
1 green pepper (I used a frozen one from my garden last year)
1 Roma tomato
2 cloves garlic
1/2 Instant brown rice
4 cups water
1 tablespoon flour
1/2 cup tomato sauce
1/4 cup Parmesan/Romano cheese
1/2 teaspoon cumin
1/2 teaspoon paprika
salt and pepper to taste
Start by browning sausage in a large pot. Add chopped onion, garlic, green pepper, and tomato to browned sausage and cook until veggies are soft.
Next add flour and stir until combined. Add water, tomato sauce, and rice and cook until boiling. Cover and turn down to a simmer. After 20 minutes add seasoning and cheese.
A cheese quesadilla makes the perfect side.
