Healthy Blender Pancakes

My favorite healthy pancake!  Great for a filling breakfast to give you lots of energy to start your day.  Convenient to grab on the go or to add fun toppings for a satisfying breakfast. I’ve added fruit, nuts, honey, yogurt, and even whip cream!


2 eggs

1 cup oats

1 cup cottage cheese

1 tsp vanilla extract

1\2 tsp cinnamon



Mix ingredients together in a blender.


Heat skillet to medium high heat.   Wait a couple  of minutes then pour the batter.  I used a large non stick pan and it fit 3 mini’s perfect!

This recipe yields 6 mini pancakes. Yum!
