Fresh pumpkin is best! I use everything inside this orange beauty.
Pumpkin seed recipe
Cut open, scrap out seeds and rinse.
Add 2 tablespoons of salt and seeds to a boiling pot of water for 5 minutes.
Drain and let seeds dry on a towel over night.
Toss seeds with 1 tablespoon a extra virgin olive oil and 1/4 teaspoon of sea salt.
Bake at 350 for 30 minutes or until golden brown.
After your done picking all those seeds out you can scrap out the insides.
Pumpkin Puree Recipe
A spoon works best to scrap the insides of the pumpkin.
Once you’ve scraped out about 2 cups add to a pot with 2 tablespoons of water, 1 teaspoon of cinnamon, 1 teaspoon of nutmeg, and 1 teaspoon clove.
Let cook for 30 minutes, cool, and puree. I use my nutria bullet to puree but any blender will do.
You can us this puree to any recipe you like. Works great in my pumpkin chocolate chip bread.
